Ingredients
  

  • 1 cup fresh cilantro loosely packed including stems
  • 2 jalapeños stemmed seeded for less heat if desired
  • 2 cloves garlic peeled
  • 2 tbsp lime juice freshly squeezed
  • ½ cup mayonnaise or substitute with Greek yogurt
  • ¼ cup queso fresco or Parmesan crumbled
  • 2 tbsp olive oil extra virgin preferred
  • ¼ tsp salt or to taste

Instructions
 

  • Wash and chop the cilantro and jalapeños.
  • Add all ingredients to a blender or food processor.
  • Blend until the sauce is smooth and creamy.
  • Taste and adjust salt, lime juice, or jalapeños for flavor and heat.
  • Transfer to a jar or container, and refrigerate for up to 5 days.

Notes

  • For a vegan version, use vegan mayo and omit the cheese.
  • To make it thinner for drizzling, add a bit more lime juice or olive oil.
  • Use immediately for best flavor, though it can be stored for several days.
  • Adjust the number of jalapeños for your preferred spice level.
  • For deeper flavor, roast the garlic before blending.
