Ingredients
  

  • 1 can Chickpeas drained and rinsed
  • 2 cups Mixed vegetables e.g. broccoli, peppers, carrots
  • 1 cup Cooked quinoa or rice
  • 2 tbsp Olive oil
  • 1 tbsp Soy sauce low sodium preferred
  • 1 tsp Smoked paprika
  • 1 clove Garlic minced
  • to taste — Salt and pepper
  • optional — Lemon juice squeeze for brightness

Instructions
 

  • Wash and chop all fresh vegetables.
  • Warm olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Add chopped veggies and stir-fry for 5–7 minutes until tender-crisp.
  • Stir in chickpeas and cooked quinoa (or rice). Mix well.
  • Season with soy sauce, smoked paprika, salt, and pepper.
  • Cook for another 5 minutes, stirring occasionally.
  • Remove from heat, add a squeeze of fresh lemon juice if desired, and serve warm.
