Ingredients
  

  • 1 cup Green olives Pitted and finely chopped
  • 1 cup Black olives Pitted and finely chopped
  • 2 tbsp Olive oil Extra virgin for best flavor
  • 1 tbsp Lemon juice Freshly squeezed
  • 1 clove Garlic Minced
  • 1 tsp Red pepper flakes Optional for heat
  • 1 tsp Fresh parsley Chopped
  • 1 tsp Oregano Dried or fresh
  • 1 tbsp Capers Drained
  • ½ tsp Black pepper Adjust to taste

Instructions
 

  • Finely chop the green olives and black olives, then place them in a mixing bowl.
  • Add the minced garlic, red pepper flakes, chopped parsley, and oregano.
  • Pour in the olive oil and lemon juice, then stir everything together until well combined.
  • Gently fold in the capers and black pepper, adjusting the seasoning to your preference.
  • Cover and let the relish sit for at least 30 minutes to allow the flavors to meld.
  • Serve immediately or store in an airtight container in the refrigerator for up to one week.

  • This olive relish can be customized by adding roasted red peppers or sun-dried tomatoes for extra depth.
