- 4 large russet potatoes
- Vegetable oil for frying
- 1 teaspoon sea salt
- 1 teaspoon finely minced garlic
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon truffle oil
- ¼ cup grated Parmesan cheese optional
Preparation:
Wash and scrub the potatoes thoroughly.
Using a mandoline slicer or sharp knife, slice the potatoes into thin rounds, approximately 1/8-inch thick.
Place the potato slices into a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
Preheat Oil:
In a deep fryer or large heavy pot, pour enough vegetable oil to reach a depth of about 2 inches.
Heat the oil to 325°F (163°C).
First Frying:
Drain the soaked potatoes and pat them dry thoroughly with paper towels.
Working in small batches, fry the potato slices in the preheated oil for about 2-3 minutes until they are cooked but not browned.
Remove the slices from the oil using tongs or a slotted spoon and place them on paper towels to drain.
Second Frying:
Increase the oil temperature to 350°F (175°C).
Return the partially cooked potato slices to the hot oil in small batches.
Fry for an additional 1-2 minutes until they are golden brown and crispy.
Remove and drain on fresh paper towels.
Seasoning:
While the chips are still warm, place them in a large bowl.
Drizzle with truffle oil and toss gently to ensure even coating.
Sprinkle with sea salt, minced garlic, chopped parsley, and grated Parmesan cheese (if using).
Toss again to distribute the seasonings evenly.
- Alternative Cooking Method: For a healthier option, you can bake the potato slices. Preheat the oven to 425°F (218°C). Arrange the dried potato slices on a baking sheet lined with parchment paper, brush lightly with vegetable oil, and bake for 15-20 minutes, flipping halfway through, until golden and crispy.
- Truffle Products: Truffle oil is commonly used for its availability and convenience. However, if you have access to fresh truffles or truffle salt, they can enhance the flavor even more.
- Storage: These chips are best enjoyed fresh. If you have leftovers, store them in an airtight container at room temperature for up to 2 days. Re-crisp them in a preheated oven at 350°F (175°C) for a few minutes before serving.
